Plain rice dishes tend to get quite uninteresting at times, and whatever sauce you are serving it with needs to have a lot of flavor in order to lift the rice. So in my quest to liven up my rice dishes, i came up this simple yet delicious recipe.
3 cups precooked rice (I used this one)
1 small finely diced onion
1 cup precooked spinach
3 tbsp Extra Virgin Olive Oil (EVOO)
1/4 cup roughly chopped raw cashew nuts
1 tbsp smoked paprika (I used this one)
Salt and Black pepper to taste
1. Fry onions in EVOO over medium heat, until translucent.
2. Add cashews and toast them off until golden.
3. Add spinach and paprika and fry for 2 minutes.
4. Add rice along with the salt and pepper and stir thoroughly, until evenly mixed through.
5. Serve and enjoy
